Christmas Rocky Road Pudding
What you need
200g bar of dark cooking chocolate
200g bar of milk cooking chocolate
100g (½ small block) of butter
5 tablespoons of golden syrup
1 packet of mini marshmallows
6 digestive biscuits
Cling film
A set of battery-operated mini Christmas lights (optional)
Equipment
Large bowl
Large plate
Wooden spoon
Small glass bowl or soup bowl
Method
Break the chocolate into squares and put into the large bowl with the golden syrup and sugar.
Melt on medium heat in the microwave. See Top Tip on melting chocolate (here)
Break the biscuits and the marshmallows and put them into the bowl of melted chocolate.
Mix all the ingredients well together with a wooden spoon.
Line the glass bowl or the soup bowl with clingfilm and pour in the pudding mix.
Leave the pudding mix to set for 2/3 hours in the fridge or 30 minutes in the freezer until the chocolate is set.
Turn out the pudding onto a plate and remove clingfilm.
Decorate with icing sugar, sprinkles, smarties, mini marshmallows, mini Christmas lights and any other little treats that will make your Christmas pudding look spectacular!
